Southern Breakfast Gravy

1 lb spicy breakfast sausage
3 tablespoons butter
1/4 cup flour
4 cups whole milk
salt/pepper
1 tspn sugar
1. Brown sausage in deep skillet, remove with a slotted spoon and set aside. Leave drippings in the pan
2. Stir butter in pan on low-medium heat until melted
3. Add flour gradually and stir to make roux
4. Whisk in milk, 1/2 cup at a time (3 cups)
5. Add sugar, reduce heat
6. Once gravy has thickened, use the last cup of milk to get desired consistency
7. Salt/pepper to taste
